Home canned salsa made with fresh garden tomatoes. As spicy as you like, depending on the type of peppers you use. I use a mix of jalapeno and habenero peppers.
Peel and chop tomatoes, onions and peppers…(onions and peppers I do in food processor).
Combine with remaining ingredients and cook till boiling.
Pour into jars and seal. This makes about 12 or so quarts of salsa.
Recipe calls for 1/2 bushel of tomatoes, which is 20 -22 lbs

How long do I process in the water bath after sealing the jars???
