I used to make these into popcorn balls and take them to study sessions with friends. Let’s just say, everyone wanted to be in my study group!
Pop popcorn and place in large bowl.
Combine butter, brown sugar, and marshmallows in microwave safe bowl and cook on high for 4 minutes, stopping and stirring the mixture after every minute.
After 4 minutes, add baking soda to caramel mixture and stir mixture until combined and frothy. Pour over popcorn and stir to cover popcorn completely. Cool and serve. Store in covered plastic container.
I often form popcorn into balls while mix is still warm but not hot. To do this, I lather my hands in butter to keep popcorn from sticking to me and then roll into balls. Then cool completely.
