When I was growing up, my grandpa raised ACRES of zucchini. The grandkids believed there were only two purposes for the existence of zucchini: carve into a boat and float in the cattle water tank, or THIS PIE! So quick, so easy and so yummy, my sisters and I would fight over this pie!
Blend all ingredients together and pour into unbaked pie shell. Sprinkle nutmeg on top. Bake at 425 degrees for 25 minutes, then reduce heat to 350 degrees for 35 minutes. Pie is done when a knife inserted comes out clean. Time may need to be adjusted if you are using a deep dish pie crust.
