This recipe was handed down from my grandmother and we make them every year for Christmas. They are a little labor-intensive, but worth it.
To make the filling, combine sugar, flour, raisins, dates, lemon juice, salt and water in a small saucepan. Cook over low heat until thickened. Cool.
To make the cookies, cream the shortening. Blend in sugar, add egg and beat until smooth. Add vanilla. Add dry ingredients alternately with milk. Roll out dough 1/8″ thick.
Cut out 2 cookies (I use Christmas-themed cookie cutters, but if it’s not Christmas, you certainly don’t have to). Place approximately 1 teaspoon of filling on one cookie and top with the second, sandwich style. Press edges firmly to seal.
Bake in a preheated 400-degree oven for 6 to 8 minutes, or until cookies are just starting to brown on the edges. Do not over-bake.
