Easy and simple peanut butter truffles that are the perfect spin on a delicious Reese’s cup!
In a bowl, add honey and peanut butter and mix together with a pinch of salt. Slowly add into almond flour and mix together until fully incorporated.
Roll into 1/2-inch balls and place on a baking sheet. Freeze for 5 minutes just to harden.
While they are freezing, take chocolate chips and coconut oil and place in a microwavable safe bowl. Mmicrowave for 30 seconds. Take out and stir, then place back in the microwave for another 30 seconds. Take out and keep stirring until all of the chips are dissolved and you are left with a slightly thick chocolate sauce.
Take out peanut butter balls and dunk each one in the chocolate. Place back on the baking sheet. Sprinkle a little sea salt on top of each one if you would like.
Leave out on the counter to harden before placing back in the fridge in an airtight container.
