A tangy tropical dessert or snack that will transport you to the tropics, with warm sunshine and soft breezes. Refreshing on a hot summer day, or any time of year that you wish you could bring on summer. Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, grain free, sugar free, nut free, dairy free option.
Line up 8 small (1/2 cup capacity) jars or cups on the counter.
Pour 1/4 cup of the BAI drink into a 2-cup measuring cup. Sprinkle gelatine over top of the liquid, allow to set for 5 minutes, or until all of the crystals have absorbed liquid.
Microwave gelatine mixture for 45 seconds, stirring just once to make sure all crystals have dissolved. Add lime juice and liquid sweetener. Fill the measuring cup to the 2-cup mark with additional BAI Drink. You will have a little bit left over in the bottle, which you won’t need for this recipe.
Add food coloring if desired—I like to add neon green to mine to enhance the lime color and tropical feel. Place jars/glasses in refrigerator until jello is completely set.
Mix all of the topping ingredients together well with a small whisk or blender. Pour evenly onto the tops of each jello cup. Return to refrigerator until ready to serve.
To serve. garnish with a dollop of sugar free whipped cream and some lime zest. Leftovers may be stored covered in the refrigerator. Do not freeze.
