A warm dessert pudding for breakfast? Yes! This hot cereal is pretty much instant. Just add boiling water. Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, grain free, sugar free, coconut free, low potassium, low sodium, CKD, Renal Diet, nut free option.
Put all dry ingredients in a bowl and stir. Pour in boiling water and stir quickly to get any lumps broken up. Add ricotta and stir in.
Let sit about 3 minutes to thicken. Add jam and nuts (if using), and stir to incorporate. Rewarm for just a minute in microwave oven, if needed.
Notes:
1. If you work and have a mug or water tight container, make this up just before leaving, and it will be ready to eat when you arrive. Or put everything except the hot water in a mug/bowl with a lid and add hot water when you get to the office.
