A very light and fluffy lemony dessert or snack for only 1 net carb. This refreshing treat also serves as a Keto fat bomb, and can be made in only 10 minutes. Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, grain free, sugar free.
In a large glass mixing bowl, soften cream cheese in microwave for 15 seconds. Add mascarpone to same bowl and return to microwave for about 8 more seconds, or until both cream cheese and mascarpone are soft enough to stir but not melted.
Using electric hand mixer, blend cream cheese and mascarpone until creamy and all lumps are gone. Add cream, lemon juice, lemon zest, and sweetener. Mix on low until incorporated. Increase mixer speed to high and continue mixing about one minute, or until the mixture becomes light and fluffy.
Store in one large covered container, or divided into 6 half-cup containers with lids. Refrigerate until ready to serve. Garnish with sugar free whipped cream and additional lemon zest, if desired.
May be frozen.
Yields approximately 3 cups, or 6 servings of about 1/2 cup each.
