Description

A light, fluffy and rich mini donut. Perfect for any special lunch or brunch, or even a light dessert. Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, grain free, sugar free, nut free, with dairy free options. CKD/Renal Diet Friendly.

Ingredients

  • FOR THE DONUTS:
  • 3 Tablespoons Butter, Melted (Coconut Oil For Dairy Free)
  • 2 Tablespoons Water
  • 3  Large Eggs
  • ¼ teaspoons Vanilla Extract
  • 2 Tablespoons Granular Erythritol (I Use Swerve)
  • 2 Tablespoons ChocZero Lightly Sweetened Cocoa Powder, White Chocolate (Amazon)
  • 2 Tablespoons Coconut Flour
  • ½ teaspoons Baking Powder
  • 1 pinch Salt
  • FOR THE GLAZE OR TOPPING:
  • 3 Tablespoons Swerve Confectioners
  • 1 Tablespoon Raspberry Powder (See Note)
  • 1 Tablespoon Heavy Whipping Cream (Unsweetened Coconut Milk For Dairy Free)
  • 1 Tablespoon Water
  • ¼ teaspoons Raspberry Extract (Or Vanilla)

Preparation

I make these in an electric mini donut maker. You could also use a mini donut pan, and bake in the oven. If using an electric donut maker, plug it in to begin warming. If using a mini donut pan, lightly grease, if needed, and and preheat oven to 325ºF.

In a 4-cup measuring cup, melt butter in the microwave (about 20 seconds). Add vanilla, water, and eggs. Whisk until smooth.

Add all of the dry ingredients, and whisk again until batter is very smooth. Pour into donut pan.

If using an electric donut maker, lock lid and bake about 7 minutes. (Mine get brown on the bottom, but not on the top. It’s doesn’t matter.) It will take 3 batches to cook them all. If the batter gets too thick to pour, add a tiny bit more water. If using the oven, bake for about 10 minutes, or until completely set to the touch.

Turn out onto cooling rack to cool. Store uncovered on counter for 2 days.

Yields 15 mini donuts, or 5 servings of 3 donuts each.

Glaze or topping options:
1. Mix powdered sweetener and raspberry powder together in a small bowl. While donuts are still a little bit warm, roll in the mixture and return to cooling rack. This is a dairy-free option, or simply a quicker way to serve the donuts. They are very nice served still a little warm with this dusting.

2. Make a glaze by mixing all ingredients together in as small bowl. If you think the glaze is too thin, add a little more powdered Swerve. If it’s too thick to dip the donuts, add a tiny amount of water. Dip each cooled donut in glaze and return to cooling rack. Leave on counter until glaze is completely set (up to 2 hours), or put rack in refrigerator to help set the glaze faster.

Notes:
• The donuts are best eaten the same day, especially if glazed. The powdered sugar coated ones seem to hold up better overnight. May be frozen with no topping, and then defrosted and topped/coated.They actually stay a bit soft when frozen, and could be eaten right out of the freezer, or defrosted on the counter for just a few minutes.
• I use Trader Joe’s Unsweetened Freeze Dried Raspberries to make raspberry powder. Put a handful in a snack size zip bag, zip shut, and crush into powder with a rolling pin. Raspberry powder can also be purchased online.
