Very simple colored sprinkles for sugar free desserts. Excellent for holiday cookies. Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, sugar free, dairy free.
Lay out a small piece of parchment paper. Pour granular sweetener into pinch bowl. Add food coloring. Tamp and stir with a mini whisk to break up clumps and distribute food coloring evenly. Add more drops if deeper color desired.
Once well mixed, pour out onto parchment, spread, and allow to dry at least one hour. Overnight is better.
Store in airtight container for a week or two. If any clumping occurs, break up with fingers.
Use on cookies and cakes, or sprinkle over whipped cream for a colorful addition to any dessert.
Should yield enough to lightly sprinkle 24 small cookies.
Notes:
1. Best used immediately after baking, or when baked goods are nearly done to keep sugar from melting.
2. Erythritol is not absorbed by the body, and has a glycemic index of zero. No nutritional value.
