The taste of summer in a jar! Now maybe I will bake pies this winter.
Place chopped peaches in a Dutch oven over medium heat.
In a medium bowl, stir sugar, ClearJel, cinnamon, and nutmeg. Add to peaches along with water and lemon juice. Bring to a gentle boil until thickened.
Ladle into 7 clean, sterilized pint jars. Seal with clean lids and rings. Process in a water bath 30 minutes from boiling, or pressure can 10 minutes at 7 pounds.
