Description

Enjoy delicious muffins for breakfast without a lot of added sugar and fat.

Ingredients

  • 1 cup Organic Whole Wheat Pastry Flour
  • 1 cup Old Fashioned Oats
  • ½ teaspoons Salt
  • 4 teaspoons Baking Powder
  • 2  Eggs
  • ½ cups Milk
  • ¼ cups Unsalted Butter, melted
  • ¼ cups Apple Butter
  • ¼ cups Maple Syrup

Preparation

Preheat oven to 350°F.

Mix flour, oats, salt, and baking powder in a bowl.

In a separate bowl, beat eggs. Add milk, butter, apple butter, and maple syrup. Mix well. Combine dry mixture and wet mixture and mix well.

Bake at 350°F for 15–20 minutes, until an inserted toothpick comes out clean. (As you can see from the picture, the muffins don’t rise much. But they taste great.)

Delish! Didn’t have apple butter, so substituted apple sauce + cinnamon + a spoonful of sucanat. Turned out great.
