Nowadays, everyone has heard of zoodles: zucchini + noodles = zoodles, or a healthy zucchini pasta which is meant to convert a pasta meal into a low carb one. I thought exactly the same when I made this brownie.
Chop the zucchini. Using a hand blender, make a puree. Add honey, peanut butter, egg, and mix well. Stir in cocoa, baking soda, and chocolate.
Prepare a 20cm cake pan with baking sheet and bake brownie at medium heat, about 170ºC (340ºF), for about 35 minutes.
The result is amazing: a healthy, flavorful, and moist brownie.
