Much faster and easier than Mason Jar Ice Cream, with a lower calorie and carb count. The consistency is somewhere between ice cream and sherbet. Using a small blender, everyone can make their own flavor. No need to decide on just one flavor, as you have to do using an ice cream maker. Suitable for Atkins, keto, lchf, low carb, diabetic, low glycemic, gluten free.
Put all ingredients in a bullet blender. The True flavor packets do not have any food coloring or other additives. If you want your ice cream to be colored, add a drop of food coloring (I leave that out).
Blend for 10 seconds. Batter will be nearly double in volume.
Pour into 1/2-cup jars with lids. For a more even freeze, stir halfway through the freezing phase (optional). Freeze for at least 2 hours before serving.
Store in freezer. The longer you leave it in the freezer, the harder it will get. If it gets too hard, just leave it on the counter for 15 minutes, or so, and it will soften up.
Variations: Use any of the True flavor packets for easy fruit flavors. I’ve made this with the orange and the lime packets. They have other flavors also. Or substitute 1 tablespoon cocoa powder for the citrus flavor. Or blend with any fresh berries you have. Be sure to count the extra carbs for the cocoa or fruit.
Note: I use the Dream Blends Coconut, Almond, Chia Milk because it has a thicker consistency than either unsweetened almond or coconut milk. It is also the most flavor neutral of the milk substitutes. If you don’t have it or cannot find it, use your milk substitute of choice. Consistency and flavor of ice cream may be different from that in the recipe.

Sharon, the recipe makes 2 servings (noted above just to right of photo). I use a 2 cup capacity blender for this. Any brand will do. You just don’t need a full size blender unless you are doubling the recipe (or more).
