If you are asking yourself, “What is Pani Popo?” then look no further than this recipe. It is probably one of our family’s favorite things to eat. Pani Popo is a Samoan sweet coconut roll that is ultra-soft and gooey.
Preheat oven to 350ºF. Grease baking pan. Place frozen rolls in pan and thaw according to package instructions.
To a pot, bring coconut milk and sugar to a boil. Mix cornstarch with water and add to the coconut milk, whisking constantly until thick.
Pour half of the coconut sauce around the rolls, along the sides. Bake for about 20–25 minutes.
After the rolls are done, pour remaining coconut sauce evenly on top of the rolls. Serve warm.
