Ready in under 30 minutes, moist, soft and sweet, these paleo banana and blueberry muffins really hit the spot.
Preheat oven to 180ºC (355ºF) and fill a muffin tray with muffin cases.
Mix dry ingredients together in a bowl.
In another bowl, mash ripe bananas with a potato masher before adding all the wet ingredients and mixing together well.
Combine dry ingredients with wet ingredients and continue to mix for a few minutes, until all ingredients are well blended. Fold in blueberries (reserve a handful to garnish afterwards).
Pour mixture into individual muffin cases. Place the muffin tray into the oven for approximately 20 minutes or until a knife inserted in the middle of one of the muffins comes out clear.
Garnish with the almond flakes and remaining blueberries and enjoy!
