Puffed and crisp, a poori is the epicure’s delight—a delicious bread to accompany curries. Master the art of making poori.
Mix dry ingredients together: flour, salt, carom seeds. Add water a little at a time to knead it into a firm dough.
Pinch off balls of 1-inch diameter. Roll out into discs.
Heat about 2 inches of oil for frying. Fry rolled-out pooris on both sides, until they puff up and turn golden. Watch carefully because they fry quickly!
Drain on a paper-towel-lined rack. Serve with curry.
