Description

Homemade mocha fudgsicles that are quick and easy to make and are the perfect dessert. Creamy, chocolate-y, fudgy, mocha flavoured fudgsicles.

Ingredients

  • 1-½ ounce, weight Dark Chocolate, Chopped
  • ½ cups Granulated Sugar
  • 1-½ Tablespoon Cornstarch
  • 2 Tablespoons Unsweetened Cocoa Powder
  • 1-½ cup Milk (I Used 2 %)
  • ½ cups Strong Brewed Coffee
  • ½ teaspoons Kosher Salt
  • ¾ teaspoons Vanilla
  • 2 teaspoons Unsalted Butter

Preparation

In a medium saucepan, over low heat, melt the chocolate, stirring constantly. Add sugar, corn starch and cocoa powder and stir to combine. The mixture will be crumbly.

Slowly whisk in the milk and coffee, whisking until mixture is smooth. Increase heat to medium high and continue to cook, stirring, for 5–10 minutes or until mixture starts to thicken. Remove it from the heat and stir in salt, vanilla and butter.

Cool slightly and pour mixture into popsicle molds. Add sticks and freeze until set, at least 6 hours, or overnight. The number of fudgsicles you get will depend on the size of your mold; mine is fairly large and the recipe yielded 4 fudgsicles.

Fudgy deliciousness!!! These are terrific ~ better than the ones I remember getting from the ice cream truck (it’s the coffee)! I was able to get five popsicles from the recipe.
