Gluten-free muffins with strawberries and bananas for a healthy treat. Yum!
Preheat oven to 350ºF.
In a large bowl, add baking mix and baking soda. Stir to combine.
In a small bowl, add eggs and vanilla extract. Stir to combine, then add to the dry ingredients. Add butter, marscapone, and bananas. Mix together using hand mixer. Gently fold in strawberries.
Line 2 12 cup muffin tins. Fill each cup 3/4 full. Bake for 17 minutes or until toothpick comes out clear. Enjoy!
