Description

A moist and delicious muffin with the wonderful flavors of peanut butter, honey and chocolate!

Perfect for breakfast, a snack or even dessert!

Ingredients

  • 2 whole Eggs
  • ¾ cups Smooth Peanut Butter
  • ⅔ cups Raw Honey
  • ⅓ cups Coconut Oil, Softened
  • 2 cups Flour
  • 1-½ teaspoon Salt
  • 1 Tablespoon Baking Powder
  • 1 cup Vanilla Almond Milk
  • 1 cup Chocolate Chips

Preparation

Preheat oven to 375ºF.

With a hand mixer, stand mixer or by hand, gently combine eggs, peanut butter, honey and coconut oil until smooth.

Mix flour, salt, and baking powder. Alternate adding dry ingredients and milk to wet ingredients, mixing gently. By hand, fold in chocolate chips.

In a muffin tin with liners, use a cookie scooper to fill each liner approximately 2/3 full. Bake for approximately 12–14 minutes, or until toothpick inserted in the center comes out clean.
