Description

Deliciously moist orange-infused muffins stuffed with Nutella and chocolate chips, and topped with orange-flavoured icing, orange zest and more chocolate chips!

Ingredients

  • 3 cups Plain Flour
  • ¾ cups Caster Sugar
  • 2 teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • 1  Large Orange, Zested
  • 1 cup Chocolate Chips
  • 1  Large Egg
  • ¼ cups Orange Juice
  • 1 cup Buttermilk
  • ½ cups Vegetable Oil
  • 12 teaspoons Nutella
  • FOR THE GLAZE:
  • 2 cups Icing Sugar
  • 2 teaspoons Orange Juice
  • Orange Zest And Chocolate Chips, For Garnish

Preparation

For the muffins:
Preheat oven to 200C (400ºF or Gas 6). Spray or butter a 12-hole muffin pan, then set aside.

Whisk together flour, sugar, baking powder, baking soda, salt, chocolate chips, and zest. Set aside.

Whisk together egg, orange juice, buttermilk, and oil. Pour wet ingredients into dry ingredients, and mix until just combined. Do not over-mix.

Divide batter evenly between the 12 muffin slots, filling only halfway. Place a teaspoon of Nutella into the centre of each muffin, then cover with remaining muffin batter. Bake for 15–20 minutes, or until a toothpick inserted just off-centre (to avoid Nutella) comes out clean. Allow to cool for 10 minutes in the pan, then transfer them to a wire rack to cool completely.

For the glaze:
Whisk together the icing sugar, and 1 – 2 tablespoons of orange juice. Add a little water if the icing is too thick.

Drizzle the icing on top of the cooled muffins, and garnish with orange zest and chocolate chips.
