Description

A delicious alternative to sweet muffins.

Ingredients

  • 3 cups Cooked Red Quinoa
  • ½ cups Whole Wheat Panko Crumbs
  • ⅓ cups Three-cheese Grated Cheese Blend
  • 3 stalks Green Onions
  • 1  Large Egg
  • 2 Tablespoons Thai Chili Garlic Paste
  • 2 cloves Garlic
  • 1 Tablespoon Chopped Fresh Parsley
  • 1 Tablespoon Chopped Fresh Cilantro

Preparation

Preheat oven to 350ºF. Spray a muffin tin (12 muffins cups) with cooking spray and set aside.

In a large bowl, mix all ingredients well. You will end up with a sticky mix that will maintain its shape when molded into a ball. Divide into 12 portions and shape into balls, pressing firmly.

Place each portion into each muffin cup, using your fingers to pack it in well until it is filled to the top.

Bake 25 minutes, keeping an eye on them so they do not brown too much. When done, remove from oven and let cool in the pan 5 minutes. Remove from muffin tin and serve.
