An authentic Irish Brown Bread, quick and easy to prepare. This is a versatile bread that is wonderful in the morning with marmalade or jelly. Fantastic paired with a stew, soup, or a corned beef dinner. This bread freezes very well.
Preheat oven to 375ºF. Spray a 9 by 5 inch loaf pan with nonstick cooking spray.
In a large bowl, add whole wheat flour, quick-cooking oats, sugar, salt, and baking soda. Make a well in the center of the dry ingredients.
In another small bowl, whisk eggs and add buttermilk to combine. Add egg mixture into the well of the dry ingredients. Stir to combine. Spoon dough mixture into the prepared loaf pan.
Bake for 35–40 minute. Check for doneness bu placing a skewer into center of loaf. If it comes out clean, bread is done. Let cool for about 10 minutes on a wire rack. Remove from the loaf pan and let bread cool completely before slicing, about 1/2 hour.
