This cilantro lime coconut brown rice recipe is an awesome way to jazz up regular brown rice with the addition of lime, cilantro and coconut oil. Make this today!
Wash rice and set aside. If you have time, soak rice for 20 minutes ahead of time. It will cut down on the cook time.
Preheat medium saucepan on medium-high heat 1–2 minutes. Place oil in the pan, then add rice. Cook rice for 30 seconds, stirring often, until rice is well coated. Stir in water with salt. Bring to a boil. Cover tightly and reduce heat to lowest setting; cook 45 minutes.
Fluff rice with a fork. Stir in zest, juice and cilantro. Serve hot.
