Sweet Potato Pecan Bread

Description

This bread is the perfect start to a fall morning. Try it as a complement to a mug of hot apple cider! And for all you coffee lovers, it tastes pretty good with that, too.

Ingredients

  • 1 can (15 Oz. Size) Sweet Potatoes, Drained, 2 Tablespoons Liquid Reserved
  • 1-¼ cup Granulated Sugar
  • ⅓ cups Water
  • ⅓ cups Vegetable Oil
  • 2 whole Eggs
  • 1-¾ cup All-purpose Flour
  • 1 teaspoon Baking Soda
  • ¾ teaspoons Salt
  • ½ teaspoons Pumpkin Pie Spice
  • ¼ teaspoons Baking Powder
  • ½ cups Chopped Pecans

Preparation

Preheat oven to 35ºF. Spray a loaf pan with cooking spray. Set aside.

In a large mixing bowl, mash sweet potatoes in reserved liquid. Add sugar, water, oil, and eggs to mashed sweet potatoes and mix well. Add flour, baking soda, salt, pumpkin pie spice, and baking powder. Mix well. Stir in chopped pecans.

Pour evenly into prepared pan. Bake for 70 minutes or until toothpick inserted into center comes out clean. Cool for 15 minutes in the pan. Turn out onto a wire rack to cool completely.
