Description

A tender and sweet muffin filled with lots of spices. With perfectly domed tops. These muffins are sure to please!

Ingredients

  • ¼ cups Butter
  • ¼ cups Applesauce
  • ½ cups Honey
  • 3 whole Eggs
  • 1 cup White Whole Wheat Flour
  • 1-½ cup All-purpose Flour
  • 2-¼ teaspoons Baking Soda
  • 1 teaspoon Nutmeg
  • ½ teaspoons Cinnamon
  • ½ cups Buttermilk
  • FOR THE TOPPING:
  • 1 cup Walnuts
  • ½ cups Sugar
  • ½ teaspoons Cinnamon
  • ½ teaspoons Nutmeg

Preparation

Preheat oven to 350ºF. Grease a standard muffin tin or line with liners.

In a medium bowl, beat together butter, applesauce, and honey. Add eggs one at a time and beat another minute.

In a medium bowl, mix together flours, baking soda, nutmeg, and cinnamon. Add flour mixture to butter mixture and beat to combine. Add buttermilk and beat again. Divide mixture evenly into prepared muffin tin.

Combine ingredients for topping and divide evenly among muffins. Press down with the back of a spoon to make sure topping sticks.

Bake immediately for 20–25 minutes. Remove from oven and let cool.
