Make these healthy protein-packed pistachio truffles whenever your sweet tooth hits.
Combine the oat flour, protein powder, almond milk, coconut flour, maple syrup and vanilla extract in a bowl. Mix everything together really well, then form into six round balls using your hands to roll them together. Place on wax paper then chill in the refrigerator for at least 30-60 minutes.
While the dough is chilling, melt the chocolate in the microwave (30 seconds at a time, stirring in between, just until melted) or on the stove top over low heat, being careful not to burn it.
Remove the dough from the fridge, then one at a time, coat the truffles in chocolate, then generously sprinkle with pistachios.
Place back in the fridge to chill, then eat up!
