3 ingredients and no churning. A delicious treat for two and a must-try during the hot summer months!
Note: Prep time does not include freeze time. I find it is best to freeze it overnight before serving.
In a bowl, add heavy cream. Using a hand mixer on high speed, whip until peaks form. Fold in coconut cream and condensed milk. Transfer to a freezer safe container (I divide the mixture among individual containers) and freeze, preferably overnight.
Serve with a sprinkling of toasted coconut flakes if desired. Hope you enjoy!
Notes:
1. You should not have any trouble finding the coconut cream. It is often used in coconut curry recipes.
2. It is normal to for this ice cream to develop small ice crystals. It is super refreshing and delicious on a warm day.
