Description

These are so easy and tasty. They are a great way to start a morning!

Ingredients

  • 1 box (18.25 Oz. Box) Yellow Cake Mix
  • 1-¼ cup Water
  • ½ cups Oil
  • 3 whole Eggs
  • 15 ounces, weight Canned Pumpkin
  • 11 ounces, weight Cinnamon Chips
  • 8 ounces, weight Cool Whip, To Serve

Preparation

Grease or line a muffin pan and preheat oven to 350 degrees F. Prepare cake mix as directed on the box, using the water, oil, and eggs from the ingredient list. Once well mixed, add the can of pumpkin and mix again until well blended. Stir in the cinnamon chips.

Fill muffin pan 2/3 full and bake at 350 degrees for 18-22 minutes. The center of the muffins might sink a little because of the weight of the pumpkin, but it creates the perfect spot for a dollop of Cool Whip or other whipping cream. So good!
