A delicious, tasty freezer-friendly meatless meal. Awesome as an appetizer too. Serve with buttered orzo or just dip ‘em with ranch.
1. Thaw the spinach and make sure it is well drained.
2. Mix all the seasoning in a small bowl. Beat the eggs in a separate medium size bowl.
3. In a separate big bowl combine the thawed and well drained spinach, mixed seasonings, eggs, Parmesan cheese and the stuffing mix. Mix until well combined.
4. Preheat oven to 350 F.
5. Prepare your cookie sheet by spraying it with cooking spray.
6. Form mixture into 1 inch balls and place them on the baking tray. Bake for 20 minutes.
7. Serve with prepared orzo or a side of ranch dressing for dipping.
