Description

This banana bread recipe is adapted from one in the Family Fun Cookbook that I received for my 12th birthday. In this case, I dialed down the sugar a bit and added the chocolate chips.

Ingredients

  • 1 Tablespoon Sesame Seeds
  • ½ cups Butter Or Margarine
  • ⅔ cups Brown Sugar, Packed
  • 2  Eggs
  • 1 teaspoon Vanilla Extract
  • 2-½ cups Whole Wheat Flour
  • 1-½ teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • 1 cup Mashed Ripe Bananas (I Used 3 Medium Ones)
  • ¾ cups Yogurt
  • ½ cups Chocolate Chips

Preparation

1. Preheat oven to 350ºF.
2. Grease a medium loaf pan and sprinkle sesame seeds evenly on bottom of pan.
3. Beat butter or margarine in a large mixing bowl. Add brown sugar and beat until creamy.
4. Add eggs, one at a time, beating after each addition. Bean in vanilla extract. Set aside.
5. In a medium bowl, mix flour, baking powder, baking soda, and salt.
6. Add about 1/3 of dry mixture to butter mixture and stir well. Add half the banana and stir.
7. Add another 1/3 of flour, and the rest of banana, and stir until incorporated.
8. Add remaining 1/3 of flour and yogurt. Mix well until combined.
9. Stir in chocolate chips.
10. Scrape batter into prepared pan and spread evenly. Bake for 60–70 minutes or until a wooden skewer inserted into the centre comes out clean.
11. Let loaf cool for about 10 minutes before turning out onto a wire rack to cool completely before slicing.
