This quick bread makes use of pantry staples and is a great addition to brunch. It’s not too sweet, and is great served with pineapple cream cheese.
Combine the flour, sugar, baking powder, coconut and salt in a large bowl. In a separate bowl, mix together the milk, eggs and butter, add pineapple and mix with the dry ingredients until just combined. Batter will be lumpy.
Bake in a greased loaf pan at 350 degrees for 45 minutes.

I fixed it! There as a glitchen in adding ingredients.

I see the milk but no mention in the ingredients list for coconut..did you mean coconut milk ?
