Delicious and healthy muffins, filled with banana and oat bran goodness.
Preheat oven to 375ºF. Spray a muffin pan with nonstick spray or use paper liners.
Combine flour, oat bran, sugar, baking powder and baking soda in a large bowl.
Whisk together milk, olive oil, egg, vanilla and banana. Stir wet mixture into dry mixture, just until combined.
Divide batter among 12 muffin cups and bake until toothpick inserted in center comes out clean, about 18 minutes.
Transfer to a rack to cool. Enjoy.
