Strawberry Banana Bread French Toast

Description

Whole grain strawberry banana bread dipped in cinnamon-infused egg whites, cooked until perfectly toasty brown and topped with a fresh strawberry orange topping.

Ingredients

  • 1 cup Strawberries, Diced
  • 1 teaspoon Granulated Sugar
  • ½ whole Orange, Juiced
  • ½ cups Liquid Egg Whites
  • 2 Tablespoons Fat-free Half-and-half
  • ¼ teaspoons Cinnamon
  • 2 slices (Thick Slices) Strawberry Banana Bread (see Note)

Preparation

1. In a small bowl combine strawberries, sugar and orange juice.
2. Cover and place in the refrigerator.
3. Preheat a skillet on medium heat. (My small skillet was set at 275 F.)
4. In a wide and shallow bowl, whisk together the egg whites, half-and-half and cinnamon.
5. Soak the slices of strawberry banana bread in the egg mixture (see note) for approximately 20 seconds on each side.
6. Spray non-stick spray on the hot skillet. Add the bread and cook until the bottom is a light crispy brown (4-5 minutes for me).
7. Flip them over and continue to cook until a light crispy brown.
8. Remove from heat and place on a serving plate.
9. Top with the strawberry orange topping and serve immediately.
10. I served mine with orange slices and black coffee. Turkey sausage or bacon would also make a great side with this.

Notes:

2. You will have quite a bit of egg left, enough to soak at least 2 more slices of bread. The nutritional data is calculated after subtracting any egg white dip that was left over.
