Delicious and easy! A great side dish for chicken, beef or fish!
Preheat oven to 350 degrees. Mix all in ingredients in a small casserole dish and cover. Place in preheated oven and bake for 30 minutes, or until liquid is absorbed by rice. Remove from oven and serve.
Recipe is easily doubled. Just be sure to bake it in a larger casserole dish.
