Description

Delicious and easy banana bread muffins.

Ingredients

  • 1-½ cup All-purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • ½ teaspoons Salt
  • 3  Bananas (peeled)
  • ¾ cups Sugar
  • 1  Egg
  • ⅓ cups Vegetable Oil

Preparation

Preheat your oven to 180 C.

In a large bowl, combine all the dry ingredients (flour, baking soda, baking powder and salt). Set aside.

Add the remaining ingredients into a food processor (bananas, sugar, egg and vegetable oil). Process until you achieve a smooth consistency. Add the resulting puree into the flour mixture and mix just until combined.

Line your two standard size muffin tins with muffin liners (recipe makes roughly 14 muffins).

Fill the muffin cups close to the top. I use 1 large, over-filled tablespoon of batter for each cup. Bake in the preheated oven for 20 minutes.
