Filled with ground oats, pumpkin puree, honey and spices, these Pumpkin Pie Bites taste just like pumpkin pie, in mini form!
In a large bowl, combine the pumpkin, honey and peanut butter. Add the oats, chia seeds, cinnamon, and pumpkin pie spice. Stir well.
Using a small spoon or scoop, roll into 16 balls. Set them on a plate. Refrigerate for 30 minutes to 1 hour, or until firm. Enjoy!
Notes: Pumpkin Pie Bites will keep covered in the refrigerator for up to two weeks.
