Icy cold cucumber pops with fresh raspberries.
You’ll also need a juicer and a popsicle mold and sticks—I used a standard size popsicle mold and this made 4.
In a juicer, add the cucumber and lemon. I don’t peel my cucumber first because I grew it myself, but if I was using a store-bought one, I would wash it super duper well. Process until you reach a juice. Stir the cucumber and lemon juice together, and taste it. Do you like it? Proceed. If not, add agave to taste.
Then, pour enough juice into your popsicle mold to come up about one-fourth of the way. Freeze for 20 minutes. Stir. Freeze for another 20 minutes. Stir.
Add some raspberries, and then another layer of juice. Repeat the process, freezing for another 20 minutes then adding another layer of berries and juice, and the sticks. Freeze solid, about 3 hours.
To unmold the pops, I usually have to run warm water on the outside.
Notes: If you don’t have a juicer, try a high-speed blender and then strain the mixture. It should be just as good, though I haven’t tried it that way.
