Description

Tasty, easy banana bread made with applesauce and egg whites.

Ingredients

  • 1-½ cup All-purpose Flour
  • ¾ cups White Sugar
  • 1-¼ teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Ground Cinnamon
  • 2 whole Egg Whites
  • 1 cup Mashed Banana (about 2 To 3 Overripe Bananas)
  • ¼ cups Applesauce

Preparation

Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8×4-inch loaf pan.

In a large bowl, stir together flour, sugar, baking powder, baking soda and cinnamon. Add egg whites, bananas and applesauce; stir just until combined.

Pour batter into prepared pan.

Bake in the preheated oven for 50 to 55 minutes, until a toothpick inserted into the center of the loaf comes out clean. Turn out onto a wire rack and allow to cool before slicing.

I had some bananas about to bite the dust and didn’t want to waste them – this recipe was the perfect solution! Moist, delicious and guilt-free (I did use Splenda instead of sugar, I’m sure real sugar would have been even better). Also – this was super easy. Might let bananas go just to make this again!

I always buy bananas with the best intentions – and then inevitably don’t eat them. Luckily this recipe came along, and I’ve made it at least 3 times now. It’s really easy, and a great healthier alternative. I add a pinch of nutmeg, and walnuts.

Very tasty yet somewhat dense. I will make again for sure. I also added carob chips which were a tasty addition to the traditional banana flavor.
