This is a great summer dessert for the entire family to enjoy—it’s so light and fluffy!
Open cans of pineapple and separate the fruit from the juice (keep juice in a small bowl).
In a 9 x 12 x 3 baking dish add a single bottom layer of graham crackers. Add all of the pineapple on top of the graham crackers in an even layer. Then add another layer of graham crackers. Over the top of the crackers add one container of Cool Whip. Spread it out with an offset spatula.
Add a final layer of graham crackers then add pineapple juices over that graham cracker layer. Then spread the other container of Cool Whip over the top using an offset spatula spread it out evenly. Dust with cinnamon. Add the pieces of dried cherries evenly across the top of the dish.
Cover with plastic wrap and refrigerate for at least 1 hour before serving. The longer you refrigerate the better this dessert is! Enjoy!
