Description

These oatmeal cookie bars are loaded with butterscotch, white and dark chocolate chips. They are sprinkled with walnuts and are the perfect sweet treat!

Ingredients

  • 2 cups Rolled Oats
  • 1-¼ cup All-purpose Flour
  • 1-¼ cup Whole Wheat Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoons Baking Powder
  • ½ teaspoons Fine Sea Salt
  • 1-¼ cup Light Brown Sugar
  • 2 whole Large Eggs
  • ½ cups Unsalted Butter, melted
  • ½ cups Canola Oil
  • 1 Tablespoon Vanilla Extract
  • ½ cups Butterscotch Chips
  • ½ cups White Chocolate Chips
  • ½ cups Dark Chocolate Chips
  • ½ cups Walnuts, Chopped

Preparation

Preheat your oven to 375 F and line a 9×13-inch baking dish with parchment paper or spray with a non-stick spray. Set aside.

In the bowl of your stand mixer with paddle attachment (or in a bowl with a handheld electric mixer) add the oats, flours, baking soda, baking powder, sea salt, brown sugar, eggs, butter, oil and vanilla extract. Mix until a dough comes together and no dry ingredients remain. Add all of the chips and the walnuts, and mix again on low speed until they are evenly dispersed.

Pour the dough into your prepared baking dish. Press the dough into the pan so that the top is even. Place pan in the oven and bake for 18-23 minutes or until the top just begins to turn a golden brown color. Remove from heat and set aside to cool.

Once the bars have cooled substantially, cut into bars and serve! Enjoy! Bars will keep in an airtight container for about a week.
