If you are looking for a new healthy twist on a plain dish, here it is.
Preheat oven to 425ºF.
Separate the cauliflower into florets an place in a large mixing bowl.
In a separate small mixing bowl add the olive oil, Parmesan cheese, and ranch mix. Mix well.
Pour the mixture over the cauliflower florets and toss gently until they are completely coated.
Pour the cauliflower mixture on a large baking sheet; I use parchment paper on mine (less clean up). Roast for about 25 minutes, flipping halfway through, until nicely browned.
Serve immediately.
