Overripe strawberries in the fridge? This delicious, savory bread uses 4 cups and is fantastic when toasted and topped with jam, Nutella, butter, cream cheese, or any other of your favorite topping!
Preheat oven to 350ºF. Grease 2 (9×5″) loaf pans with the unsalted butter and dust with a little flour. Set aside.
Whisk flour, baking powder, cinnamon, and salt in a large bowl and set aside.
In another bowl, whisk together sugar, oil, and eggs. Pour this wet mixture over the dry ingredients you whisked previously until just combined. Mixture will be very thick. fold in strawberries and pecans until well mixed. Pour into prepared loaf pans.
Cook until golden brown in color and toothpick inserted into the middle comes out clean, about 60 minutes. Let cool completely before slicing and serving.
