Pepitas, or roasted pumpkin seeds, are a delicious seasonal snack. Unlike sunflower seeds, whose outer shell you must remove before eating, you can just pop ‘em in your mouth and eat ‘em whole.
As you gut the pumpkins, keep all the seeds—and guts—in a bowl.
Throw them into a colander and rinse them under cold water, pulling away the chunks of pulp as you go.
Spread the rinsed seeds out on a baking sheet.
Allow the seeds to dry several hours or overnight. And beware: they’re quite sticky/slimy, so don’t place them on paper towels! Just leave ‘em on the baking sheet and they’ll be fine.
When they’re nice and dry, go ahead and preheat the oven to 250 degrees.
Begin by drizzling the seeds with a couple teaspoons of olive oil.
Use your fingers to toss the seeds around to coat.
Then salt and season the seeds to taste.
Pop ‘em in the oven for an hour or so, until the seeds are light golden brown.
Let them cool for a few minutes…then let the snacking begin!
Pepitas need to be stored in an airtight container if they last beyond the first day.

I used a slightly modified version of this recipe this past Halloween. I boiled the seeds in salted water first, then let them dry before carrying out the rest of the recipe. I’d leave a review for it, but since I don’t eat them, I only have second hand information to go on — but everyone loved them and they were taken home by a friend of mine.

I look forward to these every Halloween season almost as much as stealing candy from the trick-or-treat bowl. I have not however let them dry before coating and cooking. I usually turn/stir once or twice while cooking.

You know, here in Guatemala the pepita is crashed (my mom blends it) to make a seasoning for green mangos (unripe mangos), which are then eaten with that and orange or lemon juice… it´s a great snack! And then there is the pepitoria, which is the green part inside of these pepitas, and can be used just like sesame seeds.
