I love pasta! I was so excited to try this and it turned out great! I divide the dough in half before rolling out and cutting. I also use a pizza cutter to cut the noodles.

This was fun to make–but time consuming to cut all the super-thin pieces. I would recommend making this when you’re in the mood to spend some time on it. The outcome is great, and so different from packaged pasta–it’s almost “meaty”, and very hearty/filling. The noodles cook up a lot thicker and bigger than they look when cut, so you really need to roll it out as thin as you possibly can, and cut the tiniest strands possible.

I fear anything that mentions “rolling,” but this WORKED! I could’ve used more flour to roll (some bits got sticky), but that’s my fault, not anyone else’s. I also ended up letting the noodle dough rest for several minutes (while tending to child “emergencies”), so maybe that helped, too.
I made a TERRIBLE mess doing this by hand, so next time we’re going to try making them with our dough attachment & stand mixer..
But all in all, great first time noodle experiemnt, and I would use this recipie again in a heart beat! We are in LOVE with these noodles at our house!

I had never made my own pasta before, and now I never want to stop! So easy and SO delicious.

First time I made this it just didn’t cook to soft enough, second time it was so perfect, and the leftovers that sat in the bolognese sauce overnight tasted even better. Thanks for this!

My sweet DH got me a pasta machine and it has been sitting in the box for the past four days since I’ve been too sick to cook.. the first thing I thought of today was pasta!! and this recipe looks like the perfect one to try..
Maybe I should go all out and make the bolognese sauce too? Thank you for posting this!

These tasted so good! I’ve even made these using half wheat flour and they were good then too.

Do you know the approximate weight that you measure the cup of flour? I think the biggest mistake I make is mis-measuring a cup, so I’ve been trying to stick to weights lately and it works well!
