Description

You can eat it with chips, spoon it over a hunk of cream cheese and serve it with crackers, or you can eat a nice helping of it as a salad alongside whatever main dish you’re serving. It’s as versatile as all get-out, and the best part is that if you think you don’t like black eyed peas, you don’t have to worry—you can hardly tell they’re there.

Ingredients

  • FOR THE DRESSING:
  • ½ cups Olive Oil
  • ⅓ cups White Wine (or Regular) Vinegar
  • 2 Tablespoons (to 3 Tablespoons) Sugar
  • 1 teaspoon Celery Seed
  • ½ teaspoons Dry Mustard
  • ½ teaspoons Salt
  • Freshly Ground Pepper, to taste

  • VEGGIES:
  • 3 stalks Celery Finely Chopped
  • 3 stalks Green Onions, Sliced
  • 1 whole Red Bell Pepper, chopped
  • 1 whole Cucumber, Peeled, Seeded, And Chopped
  • 1 whole Jalapeno (optional), Seeded And Chopped
  • 1 cup (or More If Desired) Chopped Cilantro
  • 2 cans Black-eyed Peas, Drained

Preparation

Mix together dressing ingredients. Set aside.

Combine all vegetables (except cilantro) with black eyed peas. Pour dressing over the top and gently stir together. Add cilantro and stir gently.

Cover and refrigerate for at least an hour. Serve with tortilla chips.

Delicious!! I’ve never made much with balck-eyed peas, but this was a hit at the New Year’s Day get together with friends. The crisp crunch of the cucumber stuck out the most to me… it was yummy!!

After meeting you at your book-signing in St. Louis in November, a group of us had a PW Party and made dishes from your new cookbook. This salsa was DELISH! So I made it for New Year’s Eve last night. It was a BIG hit! My only complaint: there was maybe a spoon full left! Must make again!!

Liked it as a salsa, but loved it as a salad. Made it for New Years Day to share with a friend and have been eating on the leftovers for the past few days. Very easy to make and will definitely be making it again.

i love to make this for parties and whenever i am asked to bring something to a party this what i come with! a yummy recipe that yields a large quantity of salsa. i also recommend using any leftovers for some huevos rancheros (nice for those that like sweet and salty)!
