Description

These super indulgent brownies are perfect for celebrating your favorite team on game day!

Ingredients

  • FOR THE COOKIE LAYER:
  • ½ cups Butter, Softened
  • ¾ cups Sugar
  • 1  Egg
  • ¼ teaspoons Peppermint Extract
  • 1-⅛ cup All-purpose Flour
  • ½ teaspoons Baking Soda
  • ½ teaspoons Kosher Salt
  • 6 ounces, weight Semi-Sweet Chocolate Chips
  • FOR THE OREO LAYER:
  • 12  Oreo Cookies, Mint Or Regular
  • FOR THE BROWNIE LAYER:
  • 1 box (18 Oz. Size) Brownie Mix, Or A Batch Of Homemade Brownie Batter
  • Additional Required Ingredients Specified In Brownie Mix Package, If Using (typically Water, Eggs, And Oil)
  • ½ teaspoons Peppermint Extract
  • FOR THE FROSTING:
  • 1 cup Whipping Cream
  • 10 ounces, weight Bag Semi-Sweet Chocolate Chips
  • Sprinkles And M&ms, For Garnish

Preparation

1. Preheat oven to 350ºF. Prepare a 9×9” pyrex baking pan with 2 sheets of foil (cris-crossed) and then lightly spray the foil with baking spray.

2. For the cookie layer, in the bowl of a standing mixer, cream together the butter and the sugar until fluffy. Add the egg and peppermint and beat until fluffy.

3. In a separate bowl, combine the dry ingredients and then add to the bowl. Cream the batter until it is creamy and well combined.

4. Mix in the chocolate chips and then transfer the batter from the mixing bowl to the pan, pushing it down into an even layer on the bottom of the pan.

5. Follow the cookie dough with a layer of Oreos. They should be lined up fairly tightly.

6. Prepare the brownie mix (you’ll typically need water, eggs, and oil, as directed in mix package) or homemade recipe and add peppermint extract to it. Transfer the brownie batter to the top of the Oreos. Gently spread the batter into an even layer.

6. Put the brownies into the oven and bake for 50-60 minutes at 350ºF. Let cool 30 minutes before frosting.

7. For the frosting, bring cream to a simmer. Remove from heat and whisk in chocolate chips. Whisk until smooth and set aside while the brownies cool.

8. Pour the frosting over the top and add the sprinkles and the m&ms. Then let the whole pan with the frosting on it cool another 1-2 hours. They must be completely cool when you cut them.

9. Take them out and slice them. Serve immediately or store in an airproof container until ready to serve.
