Description

My brother and I grew up with Betty Crocker’s boxed version of these little treats. As a nutritionist and home chef, I recreated this recipe to be not only delicious but a little healthier. I make these using fresh dates, organic oats and almond flour. Every bite brings back childhood memories. So yummy!

Ingredients

  • 1 cup Fresh Dates, Chopped
  • ½ cups Water
  • ¼ cups Sugar
  • 1-½ cup Oats, Quick Cooking, Organic
  • 1 cup Almond Flour
  • ½ cups Brown Sugar, Packed
  • ½ teaspoons Baking Soda
  • ¼ pinches Salt
  • ⅓ cups Butter, Melted
  • 1 whole Egg White Only

Preparation

Preheat oven to 350 F.

In a small saucepan over medium heat, combine dates, water and sugar. Cook and stir until mixture comes to a slow boil, then reduce heat and stir constantly until mixture thickens. Remove from heat and let the mixture cool.

In a large bowl, combine oats, flour, brown sugar, baking soda and salt. Stir in melted butter and egg white until blended. Pat 1/2 of the oat mixture into an 8×8 baking dish that you’ve coated with cooking spray. I use an olive oil cooking spray. Carefully spread the date mixture over the top and then cover with the remaining oat mixture.

Bake at 350 F for 20-25 minutes or until lightly browned. Remove dish from oven and set it on a rack. Cool completely before cutting. So yummy! Enjoy!
