Description

The crumbly oatmeal topping takes this delicious loaf of pumpkin bread over the top!

Ingredients

  • FOR THE BREAD:
  • ½ cups Butter
  • 1 cup Sugar
  • 2  Large Eggs
  • ½ cups Canned Pumpkin Puree
  • 1-½ cup Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • 1 teaspoon Ginger
  • 2 teaspoons Cinnamon
  • ½ teaspoons Nutmeg
  • FOR THE TOPPING:
  • 1 cup Oats
  • ¼ cups Sugar
  • 1 teaspoon Cinnamon
  • 6 Tablespoons Very Soft Butter

Preparation

Preheat the oven to 350 F. Spray a standard-size loaf pan with cooking spray. Set aside.

In the bowl of a standing mixer, cream together the butter and sugar until fluffy. Add the eggs one at a time and beat until fluffy. Then add the pumpkin and mix until well combined.

In a separate bowl, combine all of the dry ingredients (flour through nutmeg) and then add them into the batter and mix to combine.

Transfer the batter to the prepared loaf pan.

In a separate bowl combine the oats, sugar and cinnamon. Cut the butter in with a pastry cutter or two forks (or your clean fingers) until the streusel is a nice crumbly texture.

Sprinkle the streusel generously over the top of the bread batter.

Bake the bread at 350 F for 45-50 minutes. Remove pan from oven and set it on a rack. Let it cool completely before turning it out of the pan and slicing it.
