A quick, easy and delicious autumn side dish.
Cut the potatoes in quarters (leave the skin on) and add them into a pot of boiling water. Add ½ teaspoon of salt to the water. Boil until fork tender (about 15 minutes depending on the size of the potatoes) then drain out the water. Add the butter to the bottom of the pan and pile some of the potatoes on top of it so it melts.
Then add the garlic powder, pepper, salt and sour cream. Using a potato masher, mash the potato mixture leaving some of the potatoes in pieces. Add the potato mash into a microwave safe serving dish and just before serving, top with the cheese and warm it up in the microwave (should only take a minute or two; long enough to heat it and melt the cheese). Then top with the green onions. Alternatively, add the potato mash into an oven safe serving dish and just before serving, top with the cheese and warm it up in the oven. Then top with the green onions. Serve while hot.
